Instructions
Preparation:
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper or lightly grease a loaf pan.
Mix the Meatloaf:
In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, diced onion, minced garlic, milk, egg, Worcestershire sauce, ketchup, thyme, salt, and black pepper.
Mix gently with your hands until all ingredients are evenly combined, being careful not to overwork the mixture.
Shape the Meatloaf:
Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape into a loaf, roughly 8 inches long and 4 inches wide if using a baking sheet.
Prepare the Glaze:
In a medium mixing bowl, whisk together ketchup, brown sugar, and Dijon mustard until smooth.
Spread half the glaze evenly over the top of the meatloaf.
Bake the Meatloaf:
Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
Halfway through baking, brush the remaining glaze over the top for a glossy, flavorful finish.
Rest and Serve:
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
